This easy Spring recipe, from Wholesome Wave’s Chef Michel Nischan, is fresh and fast. Serve these grilled vegetables separately, or together.

Pan-Griddled Summer Squash with Thyme

Yield: 6-8 portions

These tender summer squash cook up quick, with just a sprinkle of salt and pepper—no oil required.

Ingredients – Summer Squash

1 1/2 pounds young summer squash, such as Eight Ball and Pattypan, trimmed, cut crosswise into 1/2- to 3/4-inch-thick slices

Sea salt

Freshly ground black pepper

1 small bunch fresh thyme

 

Method

  1. Pat squash slices dry with paper towels, then season both sides with salt and pepper.
  2. Arrange 4 to 5 thyme branches in a large cast iron skillet then lay a single layer of squash on top, cut-side down.
  3. Place a smaller skillet on top with bottom-side of skillet down (to weight the squash).
  4. Heat skillet over medium-high grill or stovetop flame until squash are golden on bottom, about 8 minutes, then flip squash and continue cooking with second skillet on top, until golden and crisp-tender, 5 to 7 minutes more.
  5. Repeat with remaining thyme and squash. Serve warm or at room temperature.

Grilled Hen-of-the-Woods Mushrooms

Yield: 6-8 portions

The frilly “fingers” of hen-of-the-woods mushrooms—aka maitake—become crisp and golden on the outside, but stay tender on the inside, when cooked on the grill. Poaching them in salted water before grilling helps keep the mushrooms intact when sliced.

Ingredients

Sea salt

2 to 2 1/2 pounds hen-of-the-woods mushrooms (maitake)

Olive oil for grilling

Flaky sea salt (like Maldon)

Freshly ground black pepper

 

Method

  1. Prepare a grill for medium-high heat. Meanwhile, bring a large wide pot of salted water to a low boil.
  2. Add mushrooms to boiling water and cook until stem ends are tender, 2 to 3 minutes, then drain.
  3. Cut mushrooms into 1-inch-thick slices. Drizzle with oil and grill, turning occasionally, until edges are golden and crisp, 3 to 5 minutes total.
  4. Transfer to a serving platter, season with flaky sea salt and pepper. Serve immediately.
